Mango And Coconut Caribbean Lamb With Sizzle And Spice Potatoes

8 Bone-in Meat Thighs, or 8 Thigh Fillets. 2 tbsp Thai Chilli Cream with Ginger. 400g Potato Medallions. 1 tsp Mexican Seasoning. Flour and Beaten Egg for coating.



4 tbsp Mango Chutney, plus two Tbsp for Potatoes. 1 C Coconut, plus two tbsp for Potatoes. Mix together the chutney, two or 3 cup coconut and chilli sauce. Lift the skin on the thighs and spoon under. Stretch the skin return to seal.



Dip into wheat and then beaten egg. Location the remaining two or 3 cup coconut onto a tray and dip the meat thighs to coat.
